Our New Car!

When Elliot and I were driving back to Waco after Christmas break, I totaled my car on the highway. We were in Oklahoma right near the Texas border when it started snowing and I hydroplaned, lost control, and slammed into the median only to end up right back in the middle of the highway. I was definitely shaken up but as soon as Elliot realized I wasn’t following anymore, he came back and we waited for the tow truck to come. Needless to say it was an interesting experience to be in a wreck and I am thankful to be 100% okay.

Since the car had gotten totaled our dads have been searching for a new car for us. Even though there aren’t a lot of instanced where we really need two cars, it will be nice to have the option of each having one in case we need it. We wanted something smaller with low gas mileage and after almost two months of searching we finally have a car!

We got to drive up to Ft. Worth on Saturday and met my parents who drove it down from Norman. It was so fun to get to see them and we’re excited about our little civic! 34 miles to the gallon!

Lettuce Wraps and Faith

Last night Elliot and I made chicken lettuce wraps. I say Elliot and I because as I was making them, he invaded my kitchen space and added to my way of cooking.. haha they turned out much better because of his help and I was blessed to have him in the kitchen with me! They were originally from a Rachel Ray recipe but I couldn’t find a few ingredients/ didn’t want to buy everything so I just made them how I wanted! Sometimes, this can definitely be a disaster but thankfully it went my way this time.

We have been pretty busy this week and will be next week with school but it has been a week full of blessing and affirmation of the faithfulness of the Lord. Praise him!

Valentines Day

Because we were busy with work on Monday, we celebrated Valentines on Friday the 18th. While this seems like an obscure date, not only were we celebrating Valentines but 2 months of marriage and one year since we left for Korea! Yes, such a special day!

Elliot made the day so fun starting with sneaking out of the house to get breakfast and roses and ending with a special dinner at a restaurant downtown called 1424. After dinner, we went to our friend’s house for a “baby gender reveal party! We wore our guess of a girl, pink, and it turned out that we were right! Yea baby girls!

Our Valentines/ 2 month marriage anniversary/ one year anniversary of leaving for Korea was so much fun and special! I loved spending pretty much the whole day with my sweet and very good looking husband! I couldn’t be more blessed!

Snow in Waco!

Last time I wrote was the week of cold and blizzard in Oklahoma. I was a bit jealous of the snow and ice there since here, although it was freezing, we still had to go to class in the frigid cold! Finally it snowed and even though it was only a few inches, classes were cancelled! It was so fun to see our house and land blanketed and beautiful in white.

Even though we have been busy with school and work, I am constantly reminded that God has blessed me beyond my comprehension. I have been convicted lately of why I do things. Everything that I do should be done with great joy in the Lord’s love and saving power! Whether it be cleaning the house, going to class, working, spending time with my husband, all I do should be done with God at the center. Our lives are not our own but God’s and I am blessed and honored to live for him in everything. Just something that I have been thinking lately…

We are so excited for where we are and where we are going! Maybe I say that a lot but I mean it, I am loving learning together right now. I know that God is leading us and he affirms that everyday. Thank you for your love and prayers!

My Joy of Cooking! BBQ Pot Roast and Baked Macaroni and Cheese

Last week I finally made a successful succession of dinners! It was truly a milestone since I have felt a bit lacking in the housewife area.. as a woman we just feel the desire to provide for our husbands by keeping the house clean and providing hearty and delicious meals. I have been looking for simple but good recipes all over the place but for some reason it is difficult for me to choose one and then execute it. If anyone has any good ones or good websites let me know! This baked macaroni was delicious and easy to make! Much to my happiness, Elliot loved it! My goal was completed!

1 and 2/3 cups uncooked elbow macaroni

1 can condensed cream of chicken soup

1 cup milk

1 tablespoon minced chives

1/2 teaspoon ground mustard

1/4 teaspoon hot pepper sauce

1 and 1/2 cups cubed cheddar cheese

2 tablespoons dried bread crumbs

1 tablespoon butter, melted

Cook macaroni. Combine soup, milk, chives, mustard and hot pepper sauce. Stir in macaroni and cheese. Spoon into a greased baking dish. Combine bread crumbs and butter and sprinkle over the top. Bake at 400 degrees fpr 25-30 minutes.

Mmm perfect for cold, snowy days

Married LIfe..

Hello, hello! So, I have officially decided that I want to be good at keeping a blog.. Hopefully I will figure out how to make it all cute and how to load pictures and everything so our life will be online for the world to see!

Just briefly I wanted to let everyone know how we are doing now that we are a married couple.

Let me just say that I love being married to Elliot! My favorite thing has to be that we get to spend so much time together now! There is no limit on when we have to go home and crawl into bed alone and instead of waiting until class is over to get to see each other we have to get up and drive the other to school everyday. Ah, marriage.. And although the dishes and laundry pile up twice as fast and even though our house is now bursting at the seams with both our belongings, marriage has proved wonderful so far.

We are learning to be married and learning to grow together which is okay and quite fun actually! I am finally getting used to being a “housewife” and making a pot roast tomorrow! I feel accomplished already!
